  • 4 large eggs

  • 4 small flour tortillas

  • 1/2 cup shredded cheese (cheddar or your favorite variety)

  • 1/4 cup diced bell peppers (any color you prefer)

  • 1/4 cup diced onions

  • 1-2 green chilies, finely chopped (adjust to your spice preference)

  • 1/2 teaspoon SWEET HEAT

  • Salt and pepper to taste

  • 1 tablespoon cooking oil

  • Optional toppings: salsa, avocado slices, sour cream, chopped cilantro


Step 1

Heat oil in a skillet over medium heat.

Step 2

Add diced onions, bell peppers, and chopped green chilies to the skillet. Sauté until they soften, about 3-4 minutes.

In a bowl, beat the eggs with sweet heat, salt, and pepper.

Push the sautéed vegetables to one side of the skillet and pour the beaten eggs into the empty space.

Cook the eggs, stirring occasionally, until they are scrambled and cooked through.

Warm the flour tortillas in a separate skillet or in the microwave.

Divide the scrambled eggs evenly among the tortillas.

Sprinkle shredded cheese over the eggs while they're still warm so it melts slightly.

Add any desired toppings such as salsa, avocado slices, sour cream, or chopped cilantro.

Step 10

Roll up the tortillas to form tacos.
